| Vinification |
Whole bunch, lightly crushed, direct pressed in a vertical basket press. No settling. Fermented in glass bonbonnes at 14-18° for 6 weeks, using indigenous yeasts. |
| Ageing | In glass on fine lees for 9 months. |
| Tasting note | Pale straw with green lights. Citrus, honey, brioche and thyme on the nose. Notes of lemon, gunflint and fresh butter on the palate, underlined by lifted minerality and freshness. Long, intense finish. |
